About DUNCAN MANLEY and DUNCAN MANLEY LTD

 

Duncan Manley is a well-known specialist in the biscuit industry. He has worked in and with the biscuit industry since 1967 and has made consultancy visits to more than 97 biscuit factories in 40 countries. He is thus a widely experienced practitioner and manager.

He is author of books that have become industry standards for reference and training,

  • Technology of Biscuits Crackers and Cookies, now in 4th edition

  • Biscuit, Cookie and Cracker Manufacturing Manuals (a set of 6 manuals)

  • Biscuit, Cracker and Cookie Recipes for the Food Industry

He has also published a unique and important website, The Biscuit Doctor, which provides a very wide range of information and advice for biscuit manufacturers. On this website is a unique on-line Technology Course. This Course is designed as 34 lessons in 4 modules. Students may take up to one year to study the Course and assessments are taken after completing each module.

He has degrees from Exeter (BSc) and Aberdeen (MSc) Universities in the UK and started his career in food with Rank Hovis McDougall in flour milling development.

He was employed by Chiltonian Biscuits Ltd. in London for nine years firstly as technical and Development Manager and for the last three years on the main board as Technical and Buying Director. He was then invited to become Research Manager for the Biscuit and Confectionery Division of Baker Perkins (now APV Baker) one of the world's leading manufacturers of biscuit making equipment.

In 1981 he established his own consultancy business DUNCAN MANLEY LTD and in 1986 formed, with his wife, the very successful Creative Food Designers Ltd (a business exclusively concerned with new food product development).

Duncan Manley organised and ran the Cambridge Biscuit Seminars from 1991 to 1998. These were residential teaching courses and were attended by delegates from 97 companies in 38 countries.
